Finnish chef Sirly Ylläsjärvi sells out entire 16-night Helsinki restaurant residency in a single day
Marje, a 20-seat one-table restaurant opening inside Helsinki’s historic Meilahti Manor for October only, sold out its entire public run on the first day reservations opened. Across 16 dinners, a maximum of 320 guests will experience chef and entrepreneur Sirly Ylläsjärvi’s highly personal interpretation of Finnish hospitality.
HELSINKI, FINLAND — All public reservations for Marje, Sirly Ylläsjärvi’s month-long restaurant residency at Meilahti Manor, were booked during the first day of sales.
The restaurant will host just 16 dinners throughout October, with no more than 20 guests each evening.
At the heart of Marje is a deliberately simple idea: one long table, one surprise menu and one shared evening.
Every guest arrives at the same time. There are no separate tables, no multiple seatings and no menu to study in advance. Instead, the evening unfolds course by course around a single communal table.
“They know they will get what I promise”
For Ylläsjärvi, the immediate sell-out is not simply about scarcity.
“I am incredibly happy and grateful. At the same time, part of me is not surprised,” Ylläsjärvi says.
“I have spent more than ten years looking after my guests and creating experiences for them in Lapland. I know what they value, and over the years we have built something very important between us: trust. They know they will get what I promise.”
Ylläsjärvi has built much of her career around ideas that challenge conventional restaurant formats.
“Many of my ideas have been questioned along the way, including the idea of building a restaurant around a single shared table. But this is now the second time I have been able to prove that thinking outside the box can work. I believe you have to trust your own vision, even when other people do not immediately understand it.”

Marje takes the philosophy behind Elsa — one table, one menu, one shared experience — and places it in an entirely different world.
For one month, the setting will be Meilahti Manor, one of Helsinki’s historic manor estates. The history of the estate stretches back centuries, while the present main building dates from the early 19th century. During the 19th century, the manor became known as a place for gatherings, garden festivities and hospitality.
That history is not incidental to Marje.
The restaurant has been conceived specifically for the manor rather than transported to it.
Ylläsjärvi will relocate from Lapland to Helsinki for the entire month and personally lead every dinner.
